Breakfast Casserole

Ingredients

  • 12 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 2 cups cottage cheese (less than one large container)
  • 2 cups grated Cheddar cheese
  • 2 cups grated Monterey Jack cheese
  • 1/4 cup melted butter
  • 1/2 lb. pork sausage, fried and drained (could substitute diced ham)

Directions

  1. mix eggs, flour and baking powder.
  2. add remaining ingredients.
  3. bake in greased 9 x 13" casserole dish (or pan) at 350 degrees for 1 hour. Serves 12.
